Just like our Turkeys, our geese are reared to full maturity, with access to grassy meadow, large pond and acres of woodland. They are fed a natural cereal, based diet, free from growth promoters.

For a truly traditional Christmas it's got to be a goose. Crispy skin, rich meat and fat that makes the most sublime roast potatoes. Few roasts are as indulgent - chef's kiss!

Our Properly free-range Christmas whole goose has a wonderfully rich flavour with sumptuous buttery fat. Each award-winning goose is dry plucked by hand and hung in time honoured tradition for 12 days to develop the intense flavour and incredible texture that we are famous for. You'll also receive a pack of giblets with your beautifully prepared free-range whole goose.

Free range Goose Size Guide

  • Small: feeds 4 – 6 people (4.0kg)
  • Medium: feeds 6 – 8 people (5.0kg)
  • Large feeds: 8 – 10 people. (6.0kg)
  • XL: feeds 8 – 10 people. (7.0kg)

At John Howe, we offer fresh geese in a range of sizes to suit your needs this Christmas. Each size guarantees exceptional quality and flavour for a memorable celebration.

Cooking Times:

  • 4kg: 2 hours 10 minutes
  • 5kg: 2 hours 45 minutes
  • 6kg: 3 hours 20 minutes to 55 minutes
  • 7kg: 3 hours 30 minutes to 45 minutes

Guide:

  • Remove the goose from all packaging and store in a refrigerator, along with the vacuum packed giblets
  • Remove the goose from the fridge, leave it to stand for 2 hours before cooking.
  • Sprinkle the with salt and pepper, and place on a roasting rack inside a deep roasting pan without foil.
  • Place goose in a pre-heated oven 180ºC/160ºFan/350ºF/Gas Mark 4. After 30 minutes prick skin alongside each breast to release some of the juices.
  • Allow 35 minutes per kg for cooking.
  • During cooking you may choose to drain off the excess fat, which keeps well in a refrigerator or can be frozen. It makes delicious roast potatoes
